UNDERSTANDING COFFEE PROCESSING

Coffee processing refers to the transformation of coffee cherries into the green beans that are ready for roasting. Once the cherries are harvested, the fruit is removed to uncover the beans inside. The primary methods of processing are:

 

  • Wet (Washed): In this method, cherries are pulped, fermented, and thoroughly washed to eliminate the fruit, resulting in a clean and bright flavour profile.
  • Dry (Natural): Here, the cherries are dried in their entirety, with the fruit still attached, before being hulled. This method imparts sweet and fruity notes to the final product.
  • Honey (Semi-Washed): This technique involves leaving some of the fruit on the beans during drying, striking a beautiful balance between sweetness and clarity.

 

Each processing method influences the flavour of the coffee, allowing home baristas to select beans based on their preferred taste. Opt for washed for a crisp acidity, natural for a bold fruitiness, or honey for a delightful mix!
