TRACEABILITY



Produced by smallholder families in the Idido community of Ethiopia's Gedeo Zone — a high-altitude region prized for its fertile red-brown soil and exceptional cup clarity — this natural-process lot is grown on garden plots of under one hectare using indigenous heirloom landraces.

 

Fresh, ripe cherries are hand-delivered daily to the Idido Processing Station, part of the Testi Coffee network, where each batch is visually graded and floated to remove under-ripe or defective fruit before being registered with a unique batch code linked to the farmer group, delivery date, and weight.

 

Cherries are then spread in thin layers on raised bamboo-mesh African beds, turned frequently for uniform drying, and monitored through daily logs tracking weather conditions, moisture readings, and drying progress — with protective covers applied during peak sun and rainfall. 

Once optimal moisture levels of 10–11% are reached, the coffee is transported to Testi's dry mill in Addis Ababa, where it is hulled, cleaned, and sorted by density and screen size while full lot traceability is maintained through coded tagging and digital tracking, before a final cupping approval by Testi's quality control team clears it for export.
