
TRACEABILITY
Produced at the Gachami Factory, part of the Baragwi Co-operative Society in Kenya's Kirinyaga region, this washed coffee is grown in the shadow of Mt. Kenya on rich volcanic soil that yields the classic SL 28 and SL 34 varietals.
Established in 1978, the factory processes 150 tonnes of cherry annually from surrounding smallholder farms, using freshwater from the Gatomboya stream throughout its meticulous wet-milling process.
Ripe cherries are hand-sorted before pulping on an Agaarde disc machine, then graded by density and fermented for 16–24 hours under closed shade. After fermentation, the beans are washed and soaked in clean stream water for a further 16–18 hours before being sun-dried on raised African beds for up to 21 days, with plastic covers applied at midday and overnight to ensure controlled, even drying.
